I am a grower in Europe and trialed this lettuce (with seed from an heirloom seed dealer in England). Known here as asparagus lettuce I grew it for the bolted stem which is harvested at 50 cm. height (1 1/2 ft.) It is peeled and steamed/eaten like asparagus.
It tasted great but the yeild of one stalk per plant even if cut into two pieces was low.
Best surprise was that the leaves on the bolted plant were enormous and long and as I stripped them off the stems weren't at all bitter--making this a two crop plant--leaves and stems.
