A species not just common, but circumpolar in its distribution. Where goes gardening, goes chickweed. Not to be confused with “mouse-eared” or the other non-delectable chickweeds, this is the smooth lettucy-green gem of winter for us. Long recognized by chefs and self-sustaining gardeners for its mild flavor and nutritional merits, this low growing interloper is now making its way into the same level of commercial trade that mache enjoyed 20 or so years ago. Fantastic wild salad mate to chicory, chervil, endive, and cress. Also fantastic for getting beneficial insects started early in the fields, as it feeds a broad spectrum of wasps, syrphids, lady beetles, and bees well before other flowers show.
