Onions are among the oldest cultivated crops, originating in the mountain valleys of Asia and the Middle East, and are perhaps the most called upon vegetable ingredient in any cookbook. My friend John Navazio has pointed out that onions may be the only vegetable that we normally consume every day of the year. Amen. Species ‘cepa’ includes all the common bulbing type onions, and some green onions. Species ‘fistulosum’ are perennial scallion type onions that never form true bulbs, but can be grown either as a quick green onion with close spacing, or as wider spaced transplants that will grow into clumps of cut-and-come-again green onions. Very winter hardy, especially with a straw mulch.

No bolting despite extra spring chilling outdoors, maturing in August with plenty of time to field dry before rain. Medium sized bulbs stored well to spring. Italian red salad onions with fine growth rings that create delicate slices for topping summer salads. Mild sweet flavor, beautiful lavender color inside.
