Very high in vitamins A and C, and calcium for strong egg shells and strong yellow yokes. Dairy fodder was once supplemented with kale and collard leaves and stems during winter. As a traveler in Portugal, I watched farm women feed kale to the chickens at the doorstep. It was one way to catch a chicken.
